自慢の蒲焼きは、まろやかな甘み

昭和２９年創業以来、うなぎ一筋親子二代に渡りこの浜名湖・浜松の地にうなぎ屋を営んで参りました。うなぎの調理方法には、関東風と関西風があります。関東の背開きに対して、関西の腹開きといって捌き方が違います。また、関西は捌いたうなぎをそのまま焼くのに対して、関東は捌いたうなぎを一度蒸してから焼きます。この蒸すことによってうなぎがより柔らかくあまく焼き上がります。うなぎのコジマヤでは、関東風の調理方法を取り入れております。素材（うなぎ）はもちろん浜名湖産、そしてたれは四十年の伝統の味、蒸しにこだわり、焼きにこだわってお客様にお出ししております。
